Fresh-cut and value-added potatoes and onions are thought to be the future of the industry by some, but seem to be struggling in a weak economy.

Marketers of each look to lines of value-added products, as well as organics, to target a premium margin and offer something for consumers who crave convenience.

As fall onion harvest concludes in multiple growing regions, onion shippers hope supplies are just right to firm a weak market.

Weather in eastern Idaho was a little milder than the cold setting in on the western side of the state in mid-October, so onions were coming out of the ground more easily than potatoes.

It may not be a tsunami, but a wave of potato popularity seems to be swelling.

A stamp of approval from the American Heart Association should help secure fresh spuds a place in the diets of Americans seeking healthy options, according to officials from the Idaho Potato Commission.

The commission announced this month that the American Heart Association certified fresh Idaho potatoes to carry the association?s ?heart-check mark.? The certification process took months to complete and included analysis of the levels of saturated fat and cholesterol in Idaho potatoes. According to nutritional information from the Idaho Potato Commission?s website, fresh potatoes have no fat or cholesterol.

At one time, the typical potato purchaser was a woman cooking for her family. Over the past several years, younger men and women living in one- or two-person households have joined her at the potato bin in search of the perfect spud.

To capture the attention of these new potato shoppers, retailers and growers are working together to offer creative promotions and provide shoppers with meal ideas, whether it is through cross-merchandising displays, in-store demonstrations or online contests. The russet potato isn?t the only one getting the attention; specialty potatoes, such as reds, yellows and fingerlings have found their way to the dinner plate.
