Baby Russet Packet

An easy potato side that can be grilled or oven cooked creating a flavorful potato that is creamy inside.




  • 1 lb Baby Russets
  • 1/4 C butter
  • 2 Tbs Olive Oil
  • Salt and Pepper 
  • 1-2 tsp Garlic Powder
  • 1-2 tsp dried parsley
  • 1 Tbs Grated Parmesan cheese 
  • Sour cream


Prep: 5 Minutes; Cook: 40 Minutes

  • Heat oven or grill to 400F
  • Wash baby russet and place them in a microwave safe dish with a lid and microwave on high for 5 min.
  • Remove potatoes from the microwave and pour olive oil and seasoning over potatoes and toss.
  • Layout out a sheet of foil and grease with 1 Tbs butter.
  • Place the potatoes onto the foil and place small amounts of remaining butter on top of the potatoes.
  • Seal foil and place in oven or on top rack of grill and cook for 15 min, turn the packet over and cook for another 15 min. or until done to your likeness 
  • Remove from grill or oven and open foil carefully folding over edges to create a dish for serving and sprinkle with 1 Tsp Parmesan cheese and serve with sour Cream
