Potato Foil Packet with Summer Sausage and Red Pepper

Easy Flavor Packed Potato Packet




  • 1 lb Baby Russets or 3 medium potatoes
  • 1 Small Red Onion
  • 1 Small Red Pepper
  • 8 oz. Summer Sausage
  • 2 Tbs Olive Oil
  • 3 Tbs Butter
  • Salt and Pepper
  • 1 Tbs dried Chives or Parsley
  • 2 tsp Garlic Powder
  • Shredded Cheddar Cheese
  • Sour Cream


Prep: 10 Minutes; Cook: 40 Minutes

  • Wash and cube potatoes into 1 inch cubes. Place in medium bowl.
  • Cut the Red Onion, Red Pepper and Sausage into chunks and place in bowl with potatoes.
  • Put 2 Tbs olive oil and seasoning over the potatoes and toss in bowl to evenly coat.
  • Lay a sheet of Aluminum Foil out and grease with 1 Tbs butter.
  • Place Potato mixture onto foil and place pieces of remaining butter on top.
  • Close foil packet, being sure to seal all openings.
  • Place on grill and cook for 40 min turning over halfway through.
  • Let cool for 5 min before opening. Top the potatoes with cheese and serve with Sour cream.
  • Serve in foil and enjoy!
