Get- ya-going Potatoes

Spinach, eggs, potatoes and mushrooms make this a healthy meal, to help give you energy to get you going.




  • 1 lb cooked baby russet, cubed
  • 2 cups raw spinach, washed
  • 6 eggs, slightly beat
  • 1/2 cup sliced mushrooms
  • salt and pepper 
  • 2 Tbs. butter or oil
  • cherry tomatoes -optional 


Prep: 10 Minutes; Cook: 15 Minutes

  • Microwave 1 pound of baby russets until fork tender about 10 min. Cube the potatoes and add to a buttered or oiled skillet. Saute for five minutes
  • Add mushrooms and cook for 2 min, add beat eggs and spinach.
  • cook until spinach is wilted and eggs are cooked, stirring often.
  • Add a few tomatoes and Enjoy!
