Skillet Potatoes with Corn and Peppers

Potatoes, bell peppers and corn make a quick and easy meal good for a weeknight or breakfast side dish.




  • 2lbs russets potatoes, cubed
  • 1 medium green and red bell pepper, diced
  • 1 medium onion, diced
  • 1 can (15.25oz) can corn, drained
  • 1Tbs olive oil
  • Salt and pepper
  • Seasoning salt
  • Queso Fresco, crumbled (opitinal)


Prep: 10 Minutes; Cook: 10 Minutes

  • Scrub and dice potatoes and place in a pot of water and boil until just tender, drain.
  • Dice the peppers and onions
  • Put 1 tablespoon olive oil in skillet and add the onions and peppers and saute 5 min, stiring occasionally.
  • Stir in potatoes and corn and seasonings to taste and cook 5-10 minutes until the potatoes are just browned, remove from heat. 
  • Add Queso Fresco right before serving.
  • Enjoy!
