Game Day Broccoli Cheese Poppers

Having a Super Bowl party or just getting together for the big day?




  • 1 lb baby russets
  • 1-2 Cups cheese broccoli soup
  • Salt & Pepper to taste


Prep: 20 Minutes; Cook: 15 Minutes

  • Wash baby russets
  • Parboil or microwave (10 minutes in glass dish with plate on top) till potatoes are soft.
  • Cut potatoes in half length ways and scoop flesh from the halves with a spoon. 
  • Place the halves onto a non-stick cookie sheet and sprinkle with a generous amount of salt. 
  • If your soup needs thickened like mine did, just add some of the scooped out potato flesh and add salt & pepper into the mix. 
  • Scoop broccoli cheese mixture into halves.
  • Bake 15 minutes.
  • Cool 5 minutes, serve, and enjoy.
