  • 2 lbs Idaho russet potatoes
  • Cheese curds
  • Gravy of choice


Prep: 15 Minutes; Cook: 20 Minutes

  • Preheat deep fryer to 250 degrees
  • Wash and cut potatoes with fry cutter
  • Blanch, or partially cook, potatoes in 250-degree fryer for 2-3 minutes
  • Remove potatoes from fryer and allow to cool to room temperature while the fryer heats to 350 degrees
  • Cook fries at 350 degrees for 3-4 minutes
  • Top with choice of cheese curds (cheddar pictured) and gravy (slow cooked short ribs pictured)
