Loaded Potato Crunch

Experience mashed potatoes in a new and creative way with this baked mashed potato recipe!




  • 2 lbs Idaho potatoes
  • 4 Tbsp butter
  • 1/2 C milk
  • 1 1/2 C shredded cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 2 green onions
  • Sour cream, for serving
  • Salt and pepper, for taste


Prep: 40 Minutes; Cook: 45 Minutes

  • Preheat oven to 400 degrees (F)
  • Peel and cube potatoes and add to a large saucepan, then cover the potatoes with water
  • Bring to a boil and simmer until tender (about 20 minutes)
  • Drain potatoes and add them back to the pan to cook out any excess water (about 2 minutes)
  • Add the butter, milk, salt and pepper to a bowl and cover with boiled potatoes
  • Mash with potato masher
  • Mix in 3/4 C of cheddar cheese
  • Grease a large cookie sheet with olive oil
  • Spoon the mashed potatoes out onto the pan and spread evenly
  • Sprinkle the remaining cheese over the entire dish
  • Bake at 400 degrees for 45-50 minutes until the bottom edges are brown and crispy
  • Top with crumbled bacon and sliced green onions
  • Cut into squares and serve with sour cream
