Quick potato dish




  • 2 lbs baby russets
  • 3 TBS butter
  • 1 cup diced ham
  • 1/2 cup shredded cheese
  • salt and pepper to taste
  • 1 tsp garlic powder


Prep: 5 Minutes; Cook: 30 Minutes

  • In a microwave safe dish with a lid add washed unpeeled baby russets and microwave for 10 min or until potatoes are soft when pierced with a fork
  • Let potatoes set 2 minutes and dice into 1 inch chunks
  • Melt butter in a cast iron skillet or large saute pan on Med High and add the potatoes, salt and pepper and garlic powder
  • Saute until potatoes start to brown about 10 min
  • Add the ham and saute for 5 min
  • Add the shredded cheese and remove from heat and set for 5 min until the cheese is melted
  • Enjoy!
